Healthy One Pot Broccoli Mac & Cheese

A deliciously creamy and wholesome version of classic mac and cheese, packed with broccoli.

Ingredients

  • 8 ounces elbow macaroni
  • 2 cups broccoli florets
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, cook the elbow macaroni according to package instructions. Drain and set aside.
  2. In the same pot, melt butter over medium heat. Stir in the flour and cook for 1 minute.
  3. Slowly whisk in the milk, stirring constantly until the mixture is thickened.
  4. Add in the shredded cheese, garlic powder, salt, and pepper. Stir until cheese is melted and smooth.
  5. Fold in the cooked macaroni and broccoli florets until well combined. Cook for another 2-3 minutes.
  6. Serve hot and enjoy!

Notes

  • For a healthier version, you can use whole grain pasta.
  • This dish can be made in advance and reheated later.
