Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix together pumpkin puree, Greek yogurt, eggs, honey, and vanilla extract until smooth.
  3. In a separate bowl, combine whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes in the pan before transferring to a wire rack to cool completely.
