Healthy Chicken Soup

A delicious and healthy chicken soup that serves as the perfect comfort food for any day of the week.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 2 cups diced vegetables (carrots, celery, onion)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add diced vegetables and cook for about 5 minutes.
  3. Stir in chicken broth and bring to a boil.
  4. Add chicken breasts, thyme, salt, and pepper. Reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. Cook for an additional 5 minutes before serving.
