Healthy Broccoli Chicken Casserole

A delicious and nutritious casserole that combines broccoli and chicken for a wholesome meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 3 cups broccoli florets
  • 1 cup brown rice, cooked
  • 1 cup low-fat cheddar cheese, shredded
  • 1 can cream of mushroom soup, low fat
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, broccoli, brown rice, and half of the cheddar cheese.
  3. In another bowl, mix together the cream of mushroom soup, chicken broth, garlic powder, onion powder, and black pepper.
  4. Pour the soup mixture over the chicken and broccoli mixture, and stir until combined.
  5. Transfer the mixture to a greased casserole dish and top with the remaining cheddar cheese.
  6. Bake for 30-35 minutes or until bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

  • This casserole can be made ahead of time and refrigerated.
  • Add additional vegetables for more flavor and nutrition.
