- 2 cups cooked chicken, shredded
- 3 cups broccoli florets
- 1 cup brown rice, cooked
- 1 cup low-fat cheddar cheese, shredded
- 1 can cream of mushroom soup, low fat
- 1 cup low-sodium chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, broccoli, brown rice, and half of the cheddar cheese.
- In another bowl, mix together the cream of mushroom soup, chicken broth, garlic powder, onion powder, and black pepper.
- Pour the soup mixture over the chicken and broccoli mixture, and stir until combined.
- Transfer the mixture to a greased casserole dish and top with the remaining cheddar cheese.
- Bake for 30-35 minutes or until bubbly and golden.
- Let it cool for a few minutes before serving.
