Healing Chicken Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup egg noodles
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the sliced carrots and celery, stirring occasionally, and cook for about 5 minutes.
  4. Add the chicken breasts, chicken broth, dried thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 20 minutes or until the chicken is cooked through.
  6. Remove the chicken from the pot, shred it, and return it to the pot.
  7. Add the egg noodles and cook until tender.
  8. Stir in the fresh parsley before serving.

Notes

  • For a richer flavor, use homemade chicken broth.
  • This soup can be made ahead and frozen.
