- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 pound boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup egg noodles
- 2 tablespoons fresh parsley, chopped
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced carrots and celery, stirring occasionally, and cook for about 5 minutes.
- Add the chicken breasts, chicken broth, dried thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 20 minutes or until the chicken is cooked through.
- Remove the chicken from the pot, shred it, and return it to the pot.
- Add the egg noodles and cook until tender.
- Stir in the fresh parsley before serving.
