- 1 pound boneless chicken breast
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 lemon, juiced
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are softened.
- Add the chicken breast and chicken broth. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
