  • 1 pound boneless chicken breast
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 lemon, juiced
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are softened.
  2. Add the chicken breast and chicken broth. Bring to a boil.
  3. Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add orzo, lemon juice, oregano, salt, and pepper. Cook until orzo is tender.
  6. Serve hot, garnished with fresh parsley.
