  • 6 cups chicken broth

  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 lemons, juiced
  • 2 eggs
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Add chicken breasts and chicken broth. Bring to a boil, then reduce heat and simmer until chicken is cooked through.
  3. Remove chicken from the pot and shred it with two forks.
  4. Return the shredded chicken to the pot. Stir in rice and cook until tender.
  5. In a bowl, whisk together eggs and lemon juice. Slowly add a ladle of hot soup to the egg mixture while whisking to temper the eggs.
  6. Gradually add the tempered egg mixture back to the soup, stirring constantly.
  7. Add dill, salt, and pepper. Stir to combine and serve hot.
