Greek Lemon Chicken Soup

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 large lemons, juiced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until translucent.
  2. Add the chicken broth and bring to a boil.
  3. Add the orzo pasta and cook according to package instructions.
  4. Once the orzo is cooked, stir in the shredded chicken, lemon juice, dried thyme, salt, and pepper.
  5. Simmer for another 5 minutes before serving.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
  • Garnish with fresh parsley if desired.
