  • 1 cup brewed espresso, cooled
  • 1 tablespoon molasses

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, spices, and salt.
  3. In a separate bowl, cream together the butter and sugars until light and fluffy.
  4. Add the egg, vanilla, espresso, and molasses to the butter mixture and mix well.
  5. Gradually add the dry ingredients and mix until combined.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Remove from the oven and let cool on a wire rack.
