In a large skillet, melt 2 tablespoons of butter over medium heat. Add the halved baby potatoes and season with salt and pepper. Cook until golden brown and tender, about 15-20 minutes, stirring occasionally.
Remove the potatoes and set aside. In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, about 1 minute.
Add the beef bites to the skillet. Sprinkle with thyme, paprika, salt, and pepper. Cook until the beef is browned and cooked to your liking, about 5-7 minutes.
Add the potatoes back to the skillet, toss everything together, and cook for an additional 2-3 minutes. Serve hot.
Notes
For extra flavor, add fresh parsley as a garnish before serving.
