  • 2 large eggplants
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 cups breadcrumbs
  • 4 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants into ½ inch rounds and sprinkle with salt. Let sit for 30 minutes, then rinse and pat dry.
  3. Set up a breading station with three bowls: flour, beaten eggs, and breadcrumbs.
  4. Dip each eggplant slice in flour, then eggs, and finally breadcrumbs.
  5. Heat olive oil in a large skillet over medium heat. Fry eggplant slices until golden brown on both sides. Drain on paper towels.
  6. In a baking dish, layer fried eggplant, marinara sauce, mozzarella, and Parmesan cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
  7. Bake for 30-35 minutes until cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add fresh basil between the layers.
  • Serve with a side of spaghetti for a complete meal.
