Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup marinara sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta shells according to package instructions; drain and set aside.
  3. In a bowl, combine ricotta cheese, chopped spinach, salt, pepper, garlic powder, and Italian seasoning.
  4. Stuff each shell with the ricotta mixture.
  5. Spread half of the marinara sauce on the bottom of a baking dish.
  6. Arrange the stuffed shells in the dish and top with the remaining marinara sauce and mozzarella cheese.
  7. Bake for 25 minutes until the cheese is melted and bubbly.

Notes

  • For added flavor, you can mix in some grated Parmesan cheese with the ricotta.
  • These shells can be made ahead of time and stored in the refrigerator until ready to bake.
