Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (8 ounces) whipped topping, thawed
  • 1 package (3.4 ounces) instant lemon pudding mix
  • 2 cups milk
  • 1 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter, then press mixture into the bottom of a 9×13 inch dish.
  3. In a separate bowl, beat together cream cheese and powdered sugar until smooth. Fold in whipped topping.
  4. Spread cream cheese mixture over the crust evenly.
  5. In another bowl, whisk together lemon pudding mix and milk until thickened. Pour over the cream cheese layer.
  6. Drizzle lemon juice over the pudding layer.
  7. Refrigerate for at least 2 hours before serving.

Notes

  • For an extra zing, add some lemon zest to the cream cheese mixture.
  • Keep leftovers covered in the refrigerator for up to 3 days.
