  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 pound chicken breast, diced
  • 4 cups chicken broth
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and chop.
  3. Add diced chicken to the pot and cook until browned.
  4. Add celery, onion, bell pepper, and garlic; sauté until softened.
  5. Pour in chicken broth and add thyme, salt, and pepper.
  6. Bring to a simmer and cook for 20 minutes.
  7. Stir in spinach and chopped turkey bacon. Cook for an additional 5 minutes.
  8. Serve hot.
