Easy Cheesy Ground Beef Enchiladas

A delicious recipe for indulgent enchiladas featuring ground beef and plenty of cheese.

  • 1 pound ground beef
  • 2 cups shredded cheese
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 1 cup chopped onions
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat, adding onions, garlic powder, cumin, and salt.
  3. Once cooked, drain the excess fat and mix in half of the enchilada sauce.
  4. Fill each tortilla with the beef mixture and roll them up.
  5. Place the rolled tortillas seam side down in a baking dish and cover with the remaining enchilada sauce and cheese.
  6. Bake for 20-25 minutes or until the cheese is bubbly and golden.

Notes

  • For extra flavor, add diced jalapeños to the beef mixture.
  • Serve with sour cream or guacamole.
