1 lb chicken breast, diced
1 cup rice
2 cups chicken broth
1 cup tzatziki sauce
1 tsp garlic powder
1 tsp dried oregano
Salt to taste
Black pepper to taste
1 cup diced cucumber
1 cup cherry tomatoes, halved
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the diced chicken, rice, chicken broth, tzatziki sauce, garlic powder, oregano, salt, and pepper.
Transfer the mixture to a greased baking dish.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil, add the diced cucumber and cherry tomatoes on top, and bake for another 10-15 minutes, or until the chicken is fully cooked and the rice is tender.
Notes
For a little extra crunch, top with toasted pine nuts before serving.
This dish can be made ahead of time and stored in the fridge.
