- 1 cup grated zucchini
- 1 cup whole wheat flour
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the grated zucchini, applesauce, eggs, and vanilla extract.
- In another bowl, combine the whole wheat flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips.
- Divide the batter evenly among the muffin tins.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before enjoying!
Notes
- For extra chocolate flavor, you can add more chocolate chips!
- Make sure to squeeze out excess moisture from the zucchini before adding it to the batter.
