Double Chocolate Zucchini Muffins

  • 1 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, applesauce, eggs, and vanilla extract.
  3. In another bowl, combine the whole wheat flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin tins.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before enjoying!

Notes

  • For extra chocolate flavor, you can add more chocolate chips!
  • Make sure to squeeze out excess moisture from the zucchini before adding it to the batter.
