Crock Pot Creamy Chicken Parmesan Soup

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups chopped spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the chicken broth, garlic powder, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once the chicken is cooked, shred it in the pot.
  5. Add the heavy cream, grated Parmesan, and chopped spinach.
  6. Stir well and cook for another 30 minutes.

Notes

  • For a thicker soup, you can add a cornstarch slurry.
  • Serve with crusty bread for dipping.
