Crispy Maple Glazed Carrots and Brussel Sprouts

A delicious side dish featuring roasted carrots and Brussel sprouts glazed with maple syrup and crispy turkey bacon.

  • 1 pound carrots, sliced
  • 1 pound Brussel sprouts, halved
  • 4 slices turkey bacon, chopped
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the carrots and Brussel sprouts. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. In a separate bowl, mix the chopped turkey bacon with the maple syrup.
  5. Pour the bacon and maple mixture over the vegetables and toss to combine.
  6. Roast for 25-30 minutes, or until the vegetables are tender and caramelized, stirring halfway through cooking.
  7. Serve hot and enjoy!

Notes

  • For extra crunch, broil the dish for the last 2-3 minutes.
