Creamy White Lasagna Soup with Veggies

  • 2 cups lasagna noodles
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add vegetable broth and bring to a simmer.
  5. Stir in lasagna noodles and cook according to package instructions.
  6. Add heavy cream and Italian seasoning; mix well.
  7. Stir in spinach until wilted.
  8. Remove from heat and stir in ricotta cheese and half of the mozzarella and Parmesan.
  9. Season with salt and pepper.
  10. Serve hot, topped with remaining cheese.
