  • 1 teaspoon Italian seasoning
  • 6 cups vegetable broth
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Add mixed vegetables and Italian seasoning, cook for 3-4 minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Add broken lasagna noodles, reduce heat, and simmer until noodles are tender.
  5. Stir in ricotta cheese and heavy cream until smooth.
