Creamy Scalloped Potatoes

  • 2 pounds potatoes, thinly sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheese (Cheddar or your choice)
  • 1/2 pound turkey bacon, cooked and crumbled
  • 1/2 cup chopped chicken ham
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon butter, for greasing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Layer half of the sliced potatoes in the dish.
  4. In a bowl, mix heavy cream, chicken broth, salt, pepper, thyme, onions, and garlic.
  5. Pour half of the cream mixture over the potatoes.
  6. Add half of the turkey bacon and chicken ham over the layer.
  7. Repeat with the remaining potatoes, cream mixture, turkey bacon, and chicken ham.
  8. Top with shredded cheese.
  9. Cover with foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes or until bubbly and golden.
  11. Let sit for 10 minutes before serving.

Notes

  • For extra flavor, add some fresh herbs like parsley or chives before serving.
  • This dish can be assembled a day in advance and stored in the fridge before baking.
