Creamy Sausage and Tortellini Soup

A warm and hearty soup that combines the rich flavors of sausage with tender tortellini in a creamy broth.

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (9 oz) cheese tortellini
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
  2. Add onion and garlic; sauté until onion is translucent.
  3. Pour in chicken broth and bring to a boil.
  4. Add tortellini and cook according to package instructions.
  5. Stir in heavy cream and Italian seasoning. Season with salt and pepper.
  6. Add spinach just before serving and cook until wilted.

Notes

  • For a lighter version, use turkey sausage and half-and-half instead of heavy cream.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
