Creamy Poblano Chicken Tortilla Soup for Cozy Nights

  • 2 poblano peppers
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1/2 cup cilantro, chopped

Instructions

  1. Roast the poblano peppers until charred, then peel and chop.
  2. In a large pot, heat olive oil over medium heat and sauté onion and garlic until translucent.
  3. Add the chicken breasts and cook until browned.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the chopped poblano peppers, cumin, paprika, salt, and pepper. Simmer for 20 minutes.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in the heavy cream and heat through.
  8. Serve with tortilla strips and garnish with cilantro.

Notes

  • Feel free to adjust the spice level by adding more peppers.
  • This soup can be enjoyed with avocado slices or cheese on top.
