- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes with green chilies
- 2 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 tablespoon taco seasoning
- 1 cup heavy cream
- 1 cup shredded cheese
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft.
- Add the chicken breasts, diced tomatoes, chicken broth, black beans, corn, and taco seasoning. Bring to a boil.
