Creamy Chicken Taco Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 tablespoon taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft.
  2. Add the chicken breasts, diced tomatoes, chicken broth, black beans, corn, and taco seasoning. Bring to a boil.
  3. Reduce heat and simmer for 20-25 minutes or until chicken is cooked through.
  4. Remove the chicken, shred it, and return to the pot.
  5. Stir in the heavy cream and cheese until melted and combined. Serve hot.
