  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add the chicken breasts and pour in the chicken broth. Bring to a boil and then reduce to a simmer.
  4. After 15 minutes, remove the chicken, shred it, and return to the pot.
  5. Add diced tomatoes, Italian seasoning, and broken lasagna noodles. Cook until noodles are tender.
  6. Stir in heavy cream, mozzarella cheese, and Parmesan cheese until melted and creamy.
  7. Remove from heat and stir in chopped basil before serving.
