  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Add the onion, carrots, celery, and garlic; sauté until vegetables are tender.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Stir in the heavy cream and thyme; season with salt and pepper.
  6. Simmer for a few more minutes until everything is heated through.
  7. Serve hot, garnished with fresh parsley.

Notes

  • Can be made in advance and stored in the refrigerator.
  • Reheat on the stove over low heat before serving.
