Ingredients

  • 1 pound butternut squash, peeled and diced
  • 1 pound sausage, crumbled
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 2 cups gnocchi
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large skillet, cook the sausage over medium heat until browned.
  2. Add the diced butternut squash and cook until tender.
  3. Stir in the thyme and sage, then pour in the heavy cream.
  4. Bring to a simmer and let cook for a few minutes.
  5. Add the gnocchi and cook until they float to the top.
