  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix well.
  3. In another bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the coconut mixture.
  4. Gradually add the flour and mix until just combined.
  5. Drop spoonfuls of the mixture onto a lined baking sheet.
  6. Bake for 20-25 minutes, or until golden brown.
  7. Allow to cool before serving.

Notes

  • For added flavor, dip the bottoms in melted chocolate.
  • Try using unsweetened coconut for a less sweet treat.
