1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
16 ounces cream cheese, softened
3/4 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
1/4 cup powdered sugar
Instructions
Preheat the oven to 325°F (160°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottoms of a muffin tin lined with cupcake liners.
In another bowl, beat the cream cheese until smooth. Gradually add granulated sugar and vanilla extract.
Add eggs one at a time, mixing well after each addition. Fold in sour cream until fully combined.
Pour the cheesecake batter onto the crusts in the muffin tin. Bake for about 20-25 minutes.
Allow to cool, then chill in the refrigerator for at least 2 hours before serving.
