Classic Creamy Tomato Soup

A delightful and warming classic creamy tomato soup featuring savory turkey bacon.

Ingredients

  • 4 cups canned crushed tomatoes
  • 1 cup heavy cream
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil and sauté onions until translucent. Add garlic and cook for 1 minute.
  3. Stir in the crushed tomatoes, vegetable broth, and sugar. Bring to a simmer.
  4. Blend the soup with an immersion blender until smooth. Stir in the heavy cream.
  5. Season with salt and pepper. Chop turkey bacon and add back to the soup.
  6. Serve warm with additional bacon on top if desired.

Notes

  • For a vegan version, substitute heavy cream with coconut cream.
  • Add fresh basil for extra flavor.
