  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/2 cup chocolate ganache

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until smooth.
  4. Add the vanilla and egg yolk; mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Shape the dough into balls and place them on a baking sheet.
  7. Use your thumb to create an indentation in each ball.
  8. Fill each indentation with chocolate ganache.
  9. Bake for 12-15 minutes. Let cool before serving.

Notes

  • For a richer filling, use dark chocolate for the ganache.
  • These cookies can be stored in an airtight container for up to a week.
