  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 2 tablespoons capers
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  3. Add the chicken to the skillet and cook until golden brown on both sides. Remove and set aside.
  4. In the same skillet, add white wine and scrape the bottom to release the brown bits.
  5. Add chicken broth, capers, and lemon juice, stirring well.
  6. Return chicken to the skillet and simmer until cooked through.
  7. Finish with the remaining butter and serve hot.
