- 2 cups shredded cooked chicken
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) enchilada sauce
- 1 cup corn kernels
- 2 cups tortilla chips, crushed
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine chicken, black beans, enchilada sauce, corn, cumin, chili powder, salt, and pepper.
- Layer half of the crushed tortilla chips in a baking dish.
- Add half of the chicken mixture on top of the chips.
- Sprinkle with one cup of cheese.
- Repeat the layers with the remaining tortilla chips, chicken mixture, and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
