Chicken Enchilada Casserole

A comforting and easy-to-make Chicken Enchilada Casserole that brings all the flavors of enchiladas in a layered meal.

  • 2 cups shredded cooked chicken
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn kernels
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine chicken, black beans, enchilada sauce, corn, cumin, chili powder, salt, and pepper.
  3. Layer half of the crushed tortilla chips in a baking dish.
  4. Add half of the chicken mixture on top of the chips.
  5. Sprinkle with one cup of cheese.
  6. Repeat the layers with the remaining tortilla chips, chicken mixture, and top with the remaining cheese.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly.
  8. Let it cool for a few minutes before serving.

Notes

  • Top with sour cream and chopped cilantro for extra flavor.
  • This casserole can be made ahead of time and stored in the fridge.
