Chicken and Kale Casserole

An easy and comforting chicken and kale casserole that warms the soul.

Ingredients

  • 2 cups cooked shredded chicken
  • 4 cups kale, chopped
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, kale, quinoa, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Transfer the mixture to a greased casserole dish and top with shredded cheese.
  4. Bake for 30-35 minutes, or until the cheese is bubbly and golden.
