Cheesy Taco Rice Skillet

Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 can diced tomatoes
  • 1 cup bell pepper, chopped
  • 1/2 cup onion, diced
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and bell pepper, and sauté until softened.
  3. Stir in ground beef, cooking until browned.
  4. Add taco seasoning and mix well.
  5. Pour in chicken broth and add rice, stirring to combine.
  6. Bring to a boil, then reduce heat and cover to simmer for 20 minutes.
  7. Remove from heat, add diced tomatoes and cheese, stirring until cheese is melted.

Notes

  • For extra spice, add jalapeños.
  • Can substitute ground turkey or chicken for beef.
