- 1 cup long-grain rice
- 2 cups chicken broth
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes
- 1 cup bell pepper, chopped
- 1/2 cup onion, diced
- 2 tablespoons olive oil
- In a large skillet, heat olive oil over medium heat.
- Add onion and bell pepper, and sauté until softened.
- Stir in ground beef, cooking until browned.
- Add taco seasoning and mix well.
- Pour in chicken broth and add rice, stirring to combine.
- Bring to a boil, then reduce heat and cover to simmer for 20 minutes.
- Remove from heat, add diced tomatoes and cheese, stirring until cheese is melted.
Notes
