Carrot Cake Vegetable Crepes with Berries

A delicious recipe for carrot cake vegetable crepes topped with fresh berries.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 1/2 cups grated carrots
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, mix the milk, eggs, and melted butter.
  3. Combine wet and dry ingredients, then fold in the grated carrots.
  4. Heat a nonstick skillet over medium heat and pour in batter to form crepes.
  5. Cook until golden, then flip and cook the other side.
  6. Serve crepes warm topped with mixed berries.

Notes

  • For extra flavor, add walnuts or pecans.
  • Can be served with whipped cream.
