Carrot and Ginger Soup

  • 1 tablespoon fresh ginger, grated
  • 1 onion, diced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and sauté until translucent.
  3. Add carrots and ginger and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until carrots are tender.
  6. Blend the soup until smooth.
