Cajun Potato Soup

  • 4 large russet potatoes
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onions and garlic to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken ham to the pot.
  4. Pour in the chicken broth and add Cajun seasoning. Bring to a boil.
  5. Reduce heat and let it simmer until the potatoes are tender.
  6. Stir in the heavy cream and season with salt and pepper.
