Cajun Potato Soup

  • 4 large potatoes, peeled and diced
  • 6 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer for 15-20 minutes.
  4. Once the potatoes are tender, use an immersion blender to blend until smooth.
  5. Stir in the heavy cream and Cajun seasoning. Cook for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crispy turkey bacon.
