Balsamic Chicken and Veggie Orzo Recipe

A flavorful and easy one-pot meal featuring chicken and vegetables cooked with orzo and a tangy balsamic sauce.

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic, bell pepper, zucchini, and cherry tomatoes. Sauté for a few minutes until vegetables are tender.
  4. Add orzo, chicken broth, balsamic vinegar, salt, and pepper. Stir to combine.
  5. Bring to a boil, then reduce heat to low and cover. Cook for 12-15 minutes or until orzo is tender and liquid is absorbed.
  6. Remove from heat and let sit for 5 minutes before serving.

Notes

  • For a vegetarian option, replace chicken with chickpeas.
  • Feel free to add other seasonal vegetables.
