- 1 pound chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tablespoon balsamic vinegar
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned.
- Stir in garlic, bell pepper, zucchini, and cherry tomatoes. Sauté for a few minutes until vegetables are tender.
- Add orzo, chicken broth, balsamic vinegar, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low and cover. Cook for 12-15 minutes or until orzo is tender and liquid is absorbed.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- For a vegetarian option, replace chicken with chickpeas.
- Feel free to add other seasonal vegetables.
