Baked Potato Soup

Baked Potato Soup is a creamy and flavorful dish that combines the indulgence of turkey bacon and chicken ham, perfect for a cozy meal.

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes. Bake for 45-60 minutes, until tender.
  3. In a pot, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.
  4. Dice the baked potatoes and add to the pot, along with chicken broth. Simmer for 10 minutes.
  5. Stir in the cream, cheese, and seasonings. Cook until the cheese melts.
  6. Serve hot, garnished with bacon, chicken ham, and chives.

Notes

  • For a lighter version, you can replace heavy cream with milk.
  • Top with additional toppings like sour cream or green onions if desired.
