- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 4 cups vegetable broth
- 1 cup corn, frozen or fresh
- 2 teaspoons chipotle in adobo, minced
- 1 teaspoon cumin
- 1 cup cheddar cheese, shredded
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wrap sweet potatoes in foil and bake for about 45 minutes or until tender.
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.
- Add black beans, broth, corn, chipotle, and cumin to the pot. Bring to a boil.
- Once sweet potatoes are cooked, peel and mash them, then add to the chowder. Stir well.
- Reduce heat and let simmer for 10-15 minutes.
- Stir in cheddar cheese until melted and season with salt and pepper.
Notes
- For extra spice, add more chipotle.
- This chowder can be made ahead and reheats well.
