Baked Chipotle Cheddar Sweet Potato Chowder

A warm and comforting chowder featuring baked sweet potatoes, chipotle, and cheddar.

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 cup corn, frozen or fresh
  • 2 teaspoons chipotle in adobo, minced
  • 1 teaspoon cumin
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap sweet potatoes in foil and bake for about 45 minutes or until tender.
  3. In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.
  4. Add black beans, broth, corn, chipotle, and cumin to the pot. Bring to a boil.
  5. Once sweet potatoes are cooked, peel and mash them, then add to the chowder. Stir well.
  6. Reduce heat and let simmer for 10-15 minutes.
  7. Stir in cheddar cheese until melted and season with salt and pepper.

Notes

  • For extra spice, add more chipotle.
  • This chowder can be made ahead and reheats well.
