- 2 pounds chicken, cut into pieces
- 2 tablespoons Jamaican curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 potato, cubed
- 1 cup coconut milk
- 1 cup chicken broth
- 1 tablespoon thyme leaves
- 1 scotch bonnet pepper (optional)
- In a large bowl, combine chicken pieces with curry powder, salt, and black pepper. Marinate for at least 30 minutes.
- In a large pot, heat vegetable oil over medium heat. Add onions, garlic, and ginger, sautéing until fragrant.
- Add marinated chicken and cook until browned on all sides.
- Stir in the bell pepper, carrots, potato, coconut milk, chicken broth, and thyme. Bring to a boil.
- Reduce heat and cover, simmering for 30-40 minutes until the chicken is cooked through and tender.
- If using, add the scotch bonnet pepper for extra heat during the last 10 minutes of cooking.
- Adjust seasoning to taste and serve hot.
Notes
- For a spicier dish, leave the scotch bonnet pepper whole in the pot while cooking.
- Serve with rice or roti for a complete meal.
