  • 2 pounds chicken, cut into pieces
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 1 potato, cubed
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 tablespoon thyme leaves
  • 1 scotch bonnet pepper (optional)

Instructions

  1. In a large bowl, combine chicken pieces with curry powder, salt, and black pepper. Marinate for at least 30 minutes.
  2. In a large pot, heat vegetable oil over medium heat. Add onions, garlic, and ginger, sautéing until fragrant.
  3. Add marinated chicken and cook until browned on all sides.
  4. Stir in the bell pepper, carrots, potato, coconut milk, chicken broth, and thyme. Bring to a boil.
  5. Reduce heat and cover, simmering for 30-40 minutes until the chicken is cooked through and tender.
  6. If using, add the scotch bonnet pepper for extra heat during the last 10 minutes of cooking.
  7. Adjust seasoning to taste and serve hot.

Notes

  • For a spicier dish, leave the scotch bonnet pepper whole in the pot while cooking.
  • Serve with rice or roti for a complete meal.
