  • 2 pounds chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, sliced
  • 1 teaspoon thyme
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 green onions, chopped

Instructions

  1. In a large bowl, combine chicken, curry powder, allspice, salt, and black pepper. Mix well to coat the chicken.
  2. Heat oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
  3. Add the marinated chicken to the pot and cook until browned on all sides.
  4. Stir in bell pepper, carrot, and thyme, cooking for a few minutes.
  5. Pour in coconut milk and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Garnish with green onions before serving.
