- 2 pounds chicken, cut into pieces
- 2 tablespoons curry powder
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 carrot, sliced
- 1 teaspoon thyme
- 1 cup coconut milk
- 1 cup chicken broth
- 2 green onions, chopped
- In a large bowl, combine chicken, curry powder, allspice, salt, and black pepper. Mix well to coat the chicken.
- Heat oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
- Add the marinated chicken to the pot and cook until browned on all sides.
- Stir in bell pepper, carrot, and thyme, cooking for a few minutes.
- Pour in coconut milk and chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Garnish with green onions before serving.
