Authentic Jamaican Curry Chicken

A delicious and easy recipe for authentic Jamaican curry chicken that brings comforting flavors to your table.

  • 2 pounds chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 Scotch bonnet pepper, whole
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth

Instructions

  1. In a large bowl, season the chicken pieces with curry powder, salt, and black pepper.
  2. Heat oil in a large pot over medium heat. Add the onions, garlic, and bell pepper and sauté until soft.
  3. Add the seasoned chicken and cook until browned on all sides.
  4. Pour the coconut milk and chicken broth into the pot. Add the whole Scotch bonnet pepper.
  5. Bring to a simmer, cover, and cook for about 30-40 minutes, until the chicken is fully cooked and tender.
  6. Remove the Scotch bonnet pepper before serving.

Notes

  • For extra flavor, marinate the chicken overnight with the spices.
  • Serve with rice and peas for a traditional pairing.
