- 2 pounds chicken, cut into pieces
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 1 Scotch bonnet pepper, whole
- 1 can (14 oz) coconut milk
- 2 cups chicken broth
- In a large bowl, season the chicken pieces with curry powder, salt, and black pepper.
- Heat oil in a large pot over medium heat. Add the onions, garlic, and bell pepper and sauté until soft.
- Add the seasoned chicken and cook until browned on all sides.
- Pour the coconut milk and chicken broth into the pot. Add the whole Scotch bonnet pepper.
- Bring to a simmer, cover, and cook for about 30-40 minutes, until the chicken is fully cooked and tender.
- Remove the Scotch bonnet pepper before serving.
