Asian Cucumber Salad

A refreshing and crunchy Asian cucumber salad that complements any meal.

Ingredients

  • 2 large cucumbers
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly and place them in a colander.
  2. Sprinkle salt over the cucumbers and let them sit for 30 minutes to draw out excess water.
  3. In a bowl, mix together rice vinegar, soy sauce, sesame oil, and sugar.
  4. Rinse the cucumbers with cold water, then pat dry with paper towels.
  5. Add the cucumbers to the dressing and toss well.
  6. Stir in the green onions and sesame seeds before serving.

Notes

  • For spiciness, add some sliced chili peppers.
  • This salad can be served immediately but tastes better after chilling for a few hours.
