2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup vegetable oil
1 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1/2 cup brown sugar
1 tablespoon ground cinnamon
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
In a separate bowl, combine the vegetable oil, buttermilk, eggs, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients until just combined.
In a small bowl, mix the brown sugar and cinnamon for the filling.
Pour half of the batter into a greased loaf pan, sprinkle half of the cinnamon filling, pour the remaining batter, and top with the rest of the filling.
Bake for 50-60 minutes or until a toothpick comes out clean.
Let it cool before slicing.
