African Peanut Stew

A flavorful and nutritious African Peanut Stew featuring turkey bacon for a healthy twist.

Ingredients

  • 1 tablespoon olive oil
  • 6 slices turkey bacon, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 teaspoons ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 sweet potato, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup peanut butter
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups kale, chopped
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add turkey bacon and sauté until crispy.
  2. Add onion, garlic, and ginger; cook until onion is translucent.
  3. Stir in cumin and smoked paprika, cooking for another minute.
  4. Add sweet potato, diced tomatoes, and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 15 minutes or until sweet potatoes are tender.
  6. Stir in peanut butter and chickpeas, cooking until heated through.
  7. Add kale and cook until wilted. Season with salt and pepper to taste.

Notes

  • This stew can be made ahead of time and reheated as needed.
  • Adjust the level of spice by adding red pepper flakes if desired.
