  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 large sweet potato, diced
  • 1 cup spinach
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and ginger; sauté until onions are translucent.
  2. Stir in the diced sweet potato, cumin, and coriander; cook for about 5 minutes.
  3. Add diced tomatoes and vegetable broth; bring to a boil.
  4. Reduce heat to a simmer and stir in peanut butter until combined.
  5. Simmer for 15-20 minutes, or until sweet potatoes are tender.
  6. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
